Pomegranate & Passion Fruit Muffins

To be honest I wasn’t planning on baking such fruit rich muffins but as I had some passion fruits close to their use by time and also I had just returned from a foodie shopping expedition carrying a small carry bag full of pomegranates (lately, this seems to be my “go to” fruit) and Mark was nagging me for some “normal” muffins, I decided to give these flavours a try. And oh boy, am I glad I did because I totally love the final effect. It’s so aromatic and unusual. I think the sensation of the crunchy seeds when biting into them makes them one of the kind.

Ingredients:

  • 150g flour
  • 120ml milk
  • 100g caster sugar
  • 30g butter; slightly melted
  • 4 passion fruit
  • 1 egg; lightly beaten
  • 1tsp vanilla essence
  • 1/2tsp baking powder
  • Giant handful of pomegranate seeds

Method:

Preheat your oven to 200C and line a 6 muffin baking tray with paper or silicone muffin casings.

In a large bowl mix together the flour, baking powder and sugar.

In a second bowl mix the milk, butter, egg, vanilla essence and passion fruit pulp then gently hand whisk until combined.

Add the wet ingredients mixture to the dry ingredients mix and fold in until just combined. Do not under any circumstances over mix them or the muffins will come out tough.

Add the pomegranate seeds and mix in gentle till evenly distributed. Finally spoon the batter into your earlier prepared muffin cases.

Bake in a preheated oven at 200C for 20-22 minutes. You want them well risen and lovely golden brown on top.

Remove from the oven and move onto a cooling rack.

Let them cool completely before serving (if you can withstand the super intense fruit aroma around the house that is).

Blueberry Dumplings A.K.A Pierogi z Jagodami

Blueberry dumplings A.K.A. Pierogi z JagodamiPierogi are a traditional Polish meal. Usually they would be filled with potatoes and cheese, sauerkraut or minced meat but come summer time when fresh fruits are in abundance we like to make a sweet version and stuff them with which ever fruits we have… blueberries being my favourite choice.

The recipe below will make around 50 dumplings, it might sound like a lot but believe me once you actually start eating… it really isn’t all that many.

Ingredients:

For the dough:

  • 1/2kg flour
  • ~250ml warm water
  • 1tbsp melted butter
  • Pinch of salt

For the filling:

  • ~300g blueberries

For serving:

  • 250g double cream
  • Sugar; to taste

Method:

Wash and dry the blueberries; they need to be totally dry.

On a large flat surface place your flour; make a well in the middle and add the water, butter and salt. Use your hands to combine the ingredients and when it has formed knead the dough.

At first the dough will be very sticky but as you knead it will become a wonderful soft and playful dough and then you will know it is ready for rolling – you can view step by step pictures on how to make it here.

Take part of your dough and roll it flat; use a large round cookie cutter (or pint glass or a coffee mug) to cut out the round shapes.

Each round “pierogi” to be needs to be filled with around 1 teaspoon of blueberries. Make sure you pinch the end tightly so your creation doesn’t fall apart during the cooking process – again for step by step pictures on how to fill pierogi please see my Russian Style Dumplings post.

Once formed place your pierogi on a lightly floured surface until you are ready to start cooking.

You will need a large, and I really mean it… a large cooking pot, filled with water; ideally wide and not so high. Add a pinch of salt to your water and bring it to a boil.

Once the water is boiling gently place each pierogi in; just a few at the time so the water surface isn’t too crowded.

Allow them to boil for a few minutes – 2 or 3 should do the trick.

Once they swim to the top use a slotted spoon and fish them out.

Make sure that are dry before serving.

Serve with cream and sugar and enjoy a traditional Polish taste.

Triple Coloured Pure Fruit Smoothie

My Triple Coloured Pure Fruit SmoothieThis time I have for you a funky looking drink which should appeal to both kids and adults. All we have in the glasses are pure fruits, nothing else, nothing less… just fruit.

So what do we need?

Well, you will need some fruits, a blender, two empty 200ml glasses and a little bit of patience 🙂

Ingredients:

  • 2 ripe bananas
  • 200g strawberries
  • 2 ripe kiwi

Method:

Well, there isn’t a lot to it… you blend each type of fruit, one at the time and slowly add them into your glasses.

I started with bananas as they are the heaviest (I think), then the strawberries and finally kiwi on top.

The trick is to add your blended fruit into the glasses very slowly, otherwise the new fruit puree goes in the middle of the glass and all you can see from the outside is the bottom layer rising up… no funky looking layers at all.

So, just like I said before, be patient and take your time.

Second thing to remember is to wash or at least rinse your blender after each type of fruit, so there is no old colour or bits transferring into the new fruit layer.

I like to drink it without mixing it up. Using a straw I start with the sweet banana, going into fresh strawberries and finishing my drink on a slightly sourer note with the sharp kiwi. Mark, on the other hand prefers to stir it well and drink once all fruit flavours are well mixed.

I am going to experiment with some other fruits and maybe I can create an even better looking set of colourful layers.

I really wish I had a cold press juicer to play with but for this moment I only have a blender so I am a little bit restricted as to what I can do.
