This is a very hot recipe, almost straight from the oven.
Really, it isn’t a joke 🙂
We just had it for dinner today; it was lovely… so lovely in fact that I have decided to share it with you.
Ingredients:
- 1 medium size cauliflower
- 50g of cooked bacon (I used one from the pack bought in the store on ready meats section)
- 50g mushrooms; sliced
- 1 carrot; grated
- 125ml single cream
- 3tbsp mayonnaise
- 200g grated mozzarella cheese (or cheddar if you prefer a stronger taste)
- 1tsp mixed herbs
- Salt and pepper to taste
Method:
Preheat oven to 180C (160C if fan assisted).
Wash your cauliflower and cut it into bite size florets.
Steam it for 10 minutes (or alternatively cook in a pan of water for 8 minutes), drain well and allow to cool.
In a large bowl combine the cream, mayonnaise, half of your bacon (crumbled into small pieces), carrot, mushrooms and mixed herbs; season with salt and pepper and mix well.
Stir in half of the cheese.
Add your cauliflower and make sure that it is nicely coated with the mix.
Place in your baking dish; add the remaining bacon (this time with some larger pieces) and cover with the second half of the cheese.
Pop into earlier preheated oven and bake for 20 minutes.
Remove from the oven and serve.
Your cauliflower bake should be al dente (i.e. crunchy). If you prefer your veggies to be softer just let it bake for additional 10 to 15 minutes.
It works well as a part of a bigger dinner (we had it with roasted potatoes and Mexican chicken drumsticks) or as a self standing dish. It can be eaten warm or cold, the choice is yours; but trust me when I say it is far nicer when straight from the oven.
